Vietnamese Pho with Beef Stew
A mixture of pho and beef cooked with brine builds a newly dish “Phở in beef stew soup” (Phở sốt vang). It attract people by softly and wine-smelly taste. This recipe yields 4 servings. PREPARATION TIME: 10 Minutes COOK TIME: 45 Minutes PREPARE INGREDIENTS 1 pound beef-leg bone or 1 large container of beef stock ¾ pound stewing beef  1 pack of dried pho - rice noodle 1 cup red wine 2 tbsp ginger and scallion 1 pack of cooking pho spice (bought at Asian grocery store) 1 bunch Green Onion 1 cup tomato sauce Thai basil, red chilli paste to serve. DETAIL RECIPE 1 - Cut the stewing beef chunk into small squares. Roughly roast the beef-leg bone then boil for stock or use the stock ready to cook 2 - Toast ginger, scallion and pho spice until fragrant. Smash and add them into the stock. 3 - Combine beef with garlic, pepper, salt, sugar, tomato sauce and marinate for about 10 minutes. Boil the beef bone in 45 minutes and re-filter bouillon. 4 - Heat oil over medium heat, saute garlic until it begins to turn light yellow and fragrant. Add beef then fry until it looks dry. 5 - Add the mixture to stock. Cook until the beef softens. Try in your taste and add red wine. 6 - Cooked the dried rice noodle in boiling water until well-done, divide into 4 bowls and cover with beef stew soup. Add Thai basil and pepper to taste. Serve with chili paste. Note: You may add carrot and daikon if you want more vegies in your dish.
Chicken simmered with coconut milk
Coconut milk adds the sweet and rich taste to the chicken dish. This is best served with steamed rice on a cold winter day. PREPARATION TIME: 20 Minutes COOK TIME: 40 Minutes PREPARE INGREDIENTS •    1 Pound chicken drumsticks •    ½ Cup fresh milk •    ½ Cup coconut milk •    1 Tsp of salt •    1 Tsp of spice •    1 Tsp of sugar •    1 Tsp of grinded garlic •    1 Tsp  of grinded citronella •    1 Tbsp of grinded red chilly •    2Tsp of curry powder •    Cooking oil DETAIL RECIPE •    Wash the drumsticks, then mix with spice, salt, and sugar for 10 minutes •    Boil cooking oil, fry garlic, chilly and citronella then add curry powder, stir well •    Put chicken into the above mixture for 30 minutes •    Cooked the mixed chicken with small fire for 5 minutes, then add coconut milk, salt, sugar, heat until it is viscous appropriately Serving suggestion: serve with cooked rice or vermicelli
Deep Fried Duck
Deep fried duck is a winning dish that will challenge your perception that Peking Duck is the only way to go. PREPARATION TIME: 20 Minutes COOK TIME: 60 Minutes PREPARE INGREDIENTS Half a duck (about 700g), rinsed and cleaned under cold water 2 tomatoes 2 cups tapioca starch 10 slices of bread 1 tbsp white wine 1 bulb ginger, peeled and sliced Green onion, washed and finely chopped 1 bunch of coriander Soya sauce, salt, ground black pepper Seasoning powder, sugar, cooking oil DETAIL RECIPE 1 - Mix together: half a spoon of soya sauce, 1 spoon of white wine, sliced white part of spring onion, brayed ginger and some ground black pepper, seasoning powder, sugar, and salt. Apply this mixture on both the outside and inside of the duck for absorbing flavor. 2 - Tomatoes: wash and slice 3 - Fry bread with cooking oil until it becomes golden brown. 4 - Pour 1 liter of water in pot and bring to a boil. Put duck in and cook until it becomes soft. Take it out and let it drain. 5 - Press the duck to make it flattish. Roll over tapioca starch 6 - Pour cooking oil in a pan, bring to the boil. Deep fry duck. Flip often to make all side equally crispy. 7 - Chop the duck into suitable pieces and place in a plate. Put some coriander and spread ground black pepper on the surface. 8 - Place sliced tomato and fried bread pieces alternately to decorate.
Vietnamese Sausage (Gio lua)
A good sausage will be light pink with some small holes on the surface. It is usually divided into 4 – 8 pieces and served with good peppered fish sauce. Since silky lean pork sausage, beef sausage or chicken sausage has the similar method of processing meanwhile pig head sausage is a little bit different in ingredients, preparation and cooking method, it will be chosen to introduce today. PREPARATION TIME: 60 Minutes COOK TIME: 40 Minutes PREPARE INGREDIENTS • 500gr meat (preferably pork shoulder) • 1 tbsp fish sauce • 1 tsp salt • 1 tsp sugar • 1/2 tbsp garlic powder • 2 tsp pepper • 1 tsp baking soda • 2 tbsp oil DETAIL RECIPE 1. Cut meat in to thin slices and freeze for 2 hours. 2. Grind well and mix with prepared spice. Beat with electric mixer for about 10 minutes until well combined, let sit for about 20 minutes. 4. Stuff the mixture in to a round mold, press it down firmly to compact the mixture. 5. Remove it from the mold then wrap by banana leaves or cling film. Steam until cooked.
Braised Fish with Coconut Milk
The culinary artistry is subtly expressed through the combination of coconut milk and fish, in this dish, the smell of fish is not only reduced but also become more delicious. PREPARATION TIME: 15 Minutes COOK TIME: 35 Minutes PREPARE INGREDIENTS • 1lb fish fillet, trout or haddock • 1 tablespoon vegetable oil • 1/2 teaspoon pepper. • 1 red chili. • 2 tablespoons fish sauce • 4 ounces coconut milk DETAIL RECIPE 1- Heat oil, gently fry the fish. 2- Add fish sauce, pepper, chili and coconut milk. 3- Simmer for 30 minutes over low heat until the fish is cooked and coconut milk mostly evaporates 4- Remove the fish fillets and place on a serving dish. Sprinkle with pepper. This dish is best served with hot rice. If you have a clay pot, that would be ideal to make this dish.
Vietnamese Seafood Pilaf
This recipe is a bit similar to Paella of Spain or Arroz Con Camarones of Ecuador but it takes a lot less time to prepare. PREPARATION TIME: 20 Minutes COOK TIME: 15 Minutes PREPARE INGREDIENTS 1/2 cup cuttle-fish, cut into slices 1 cup shrimp 1/2 cup clam meat 2 eggs 1 large bell pepper, cut into small thread 4 bowls of cooked rice 2 tbsp ketchup 1/2 tbsp salt 1 tsp seasoning powder 1/2 tsp pepper 1 tbsp oil 1 tbsp minced garlic Cucumber and tomato slices to decorate DETAIL RECIPE 1 - Boil eggs, cut into medium pieces. 2 - Put oil into a pan, brown minced garlic and then add ketchup. 3 - Next, put shrimp, cuttle-fish and clam into the pan and stir fry for 5 minutes. 4 - Add rice, salt, seasoning powder and bell pepper. 5 - Continue stirring for a few minutes until hot and well-combined. 6 - Put rice into a dish decorated with eggs and bell peppers. Garnish with some coriander and enjoy hot with soy sauce.
Vietnam Mung Bean Pudding (Che Kho)
Used to be an essential part of new year's celebration in Hanoi, Vietnam mung bean pudding is easy to prepare and an extremely healthy food. PREPARATION TIME: 15 Minutes COOK TIME: 120 Minutes PREPARE INGREDIENTS • 0.5 kg dried mung beans (still in shell) • 0.5 kg granulated sugar • 2 tablespoons sesame seeds • 1/2 tablespoon grapefruit extract (or vanilla) • 1 dash of Cardamom powder DETAIL RECIPE 1. Soak mung bean overnight, pick out all bad beans, and remove shell/skin of the rest, let dry. 2. Dry sesame in a hot shallow pan, let cool. 3. Boil mung beans in a pot until tender, about 50 minutes to 1 hour. 4. Boil water, add sugar and mix with the boiled mung bean, cook over low heat, stir constantly until it becomes a thick paste. 5. Add cardamom powder, grapefruit extract and sesame. Served warm or cool.

Goat Hotpot (Lau de)
Goat hotpot is a delicious way to combine the rich flavour of goat with various types of herbs and vegetables. The dish is especially great for family gathering and best served in cold winter days. PREPARATION TIME: 15 Minutes COOK TIME: 30 Minutes PREPARE INGREDIENTS • 1.5 pounds goat meat • 5 scallions • 2 tbsp garlic • 1 tbsp turmeric • 2 pounds rice noodle (can be dried or fresh one) • 5 tomatoes • 1 tbsp lemongrass • 1 tbsp ginger • 1 tbsp chopped green onions •  Vietnamese cilantro and thorny coriander (see Vietnamese herbs) • 2 cans (1 pound each) of chicken broth •  Salt and pepper, fish sauce, fresh chili • Other vegetables such as mushroom, okra, bok choy to serve with the hotpot. DETAIL RECIPE 1. Finely chop scallion, ginger and lemongrass. 2. Slice goat meat into thin slice and marinate with garlic, ginger, turmeric powder, 2 tbsp of fish sauce and 1 tsp of pepper. 3. Heat oil to boil and stir fry the garlic, scallions and lemongrass until fragrant. Then put the goat meat in to stir fry for 10 minutes, and pour chicken broth in to boil. Bring water to a boil over medium low heat, and add sliced tomatoes. 4. Cook over low heat until goat meat become tender, add salt and pepper to taste and you get the hotpot broth. 5. Arrange washed veggies and cooked noodle on plates to serve with hotpot.
Spring fruit salad
PREPARATION TIME: 10 Minutes COOK TIME: 5 Minutes PREPARE INGREDIENTS -    Seasonal fruits: kiwi, orange, apple, banana: 1 each; grape: 5 -    1 cup of sweetened yogurt or 1 tbsp mayonnaise.   DETAIL RECIPE -    Wash all the fruits, let them drain. -    Cut all the fruits into small cubes. -    Put all the cut fruits into a bis bowl, then blend gently with yaghourt or mayonnaise. -    Serve right away, the salad may become crumbly soft to eat.
