Floating Rice Cake (Bánh trôi)
Floating rice cake is essential to Vietnamese festival "Banh Troi - Banh Chay" to celebrate traditional cuisines and rice cultivation. Banh Troi is similar to Mochi (Japanese rice cake) in a way but the melting sugar cube inside the dough makes Banh Troi uniquely Vietnamese. PREPARATION TIME: 20 Minutes COOK TIME: 5 Minutes PREPARE INGREDIENTS 180g sticky rice flour 20g rice flour 200ml warm water 150g dark palm sugar balls Roasted sesame seeds DETAIL RECIPE 1. Prepare the dough: blend the two kinds of flour together. Gradually add in water, mixing until the dough turns smooth, elastic and glutinous. Cover and rest. 2. Pinch a little dough and flatten it out. Place a sugar ball in the middle and roll into a small ball. Repeat with the rest of the dough. 3. Bring water to a boil. Fill another bowl with warm water. 4. When the water is boiled, the rice balls in batches. Then, bring the water to the boil again. Wait until the balls float to the surface of the pot to take them out by a slotted ladle. Then, put them into the bowl of cold water right away so they are separate from each other. 5. Put the balls on a plate and sprinkle with sesame seeds. A plate of floating cakes is ready to serve and should be eaten within a day. Traditionally, floating cake is white but you could make it more colorful by adding food coloring to the dough.
Kiwi and Pineapple Blend
PREPARATION TIME: 5 Minutes COOK TIME: 15 Minutes PREPARE INGREDIENTS -    1 Pineapple, 1 kiwi -    2 lemons -    1 Ginger -    3 Tbsp sugar -    3 Tbsp desiccated coconut. DETAIL RECIPE -    Cut pineapple and kiwi to thin pieces, put all into a deep dish. -    Fry lemon peels with desiccated coconut. -    Mingle lemon juice, water and sugar -    Pour the liquid into a pot, then boil with a piece of ginger. -    Pour the cooled sauce on the fruit dish, put in to fridge for 1 hour, then enjoy. -    Can replace kiwi and pineapple with other fruits.
Candy strawberries
PREPARATION TIME: 5 Minutes COOK TIME: 10 Minutes PREPARE INGREDIENTS -    Fresh strawberries: 1 pound -    Sugar: 2 cup -    Vanilla: 1 tbsp DETAIL RECIPE -    Cook sugar and vanilla in a pot in order for the sugar to entirely melt. -    String 5 strawberries on every skewer. -    Dip the strawberries into the sugar liquid so that every strawberry is covered. -    Serve when cool.
Roasted Banana with Honey
PREPARATION TIME: 5 Minutes COOK TIME: 10 Minutes PREPARE INGREDIENTS -    Banana: 5. -    Olive oil or conrn oil: 2 tsp -    Honey: 3tsp. DETAIL RECIPE -    Peel all the bananas. -    Pour some oil on a pan, at comparatively hot temperature. -    Fry the bananas. -    Cover the bananas in aluminum paper, then roast at 200oC for 10 minutes. -    Serve with honey.
Grilled bananas with desiccated coconut
PREPARATION TIME: 45 Minutes COOK TIME: 10 Minutes PREPARE INGREDIENTS -    Desiccated Coconut: 2 tsp -    Banana: 2 -    Sugar DETAIL RECIPE -    Steam bananas in 15 minutes, then let it cool -    Roll steamed bananas in desiccated coconut. Mix with sugar and desiccated coconut. -    Pack the mixture in banana leaf in 30 minutess. -    Roast until the leaf turns red brown. -    Serve banana when cool.
Vietnamese Banana Cake
With the addition of coconut and bread pieces, this very Vietnamese recipe will make you think twice the next time you bake banana bread. PREPARATION TIME: 15 Minutes COOK TIME: 60 Minutes PREPARE INGREDIENTS 3 peeled bananas 3/4 cup sugar 3 tbsp sweet condensed milk 3/8 cup 2/3 cup wheat flour 1 cup coconut milk 3 tsp butter 2 slice toasted bread DETAIL RECIPE 1. Mash banana and tear bread into smaller pieces. 2. Mix banana, bread, coconut milk, sugar, and wheat flour together. 3. Pour the mixture into a buttered mould and bake uncovered for 1 hour or until golden at 350F (175-180C). Open the oven to butter on the cake surface to make it more sweet-smelling and appealing. 4. Remove from the oven and stand 10 minutes before removing from the mould.
