Vietnam Mung Bean Pudding (Che Kho)
Used to be an essential part of new year's celebration in Hanoi, Vietnam mung bean pudding is easy to prepare and an extremely healthy food. PREPARATION TIME: 15 Minutes COOK TIME: 120 Minutes PREPARE INGREDIENTS • 0.5 kg dried mung beans (still in shell) • 0.5 kg granulated sugar • 2 tablespoons sesame seeds • 1/2 tablespoon grapefruit extract (or vanilla) • 1 dash of Cardamom powder DETAIL RECIPE 1. Soak mung bean overnight, pick out all bad beans, and remove shell/skin of the rest, let dry. 2. Dry sesame in a hot shallow pan, let cool. 3. Boil mung beans in a pot until tender, about 50 minutes to 1 hour. 4. Boil water, add sugar and mix with the boiled mung bean, cook over low heat, stir constantly until it becomes a thick paste. 5. Add cardamom powder, grapefruit extract and sesame. Served warm or cool.
Xoi Vo (Mung Bean Coated Sticky Rice)
“Xoi vo” is an indispensable cuisine in Vietnamese tradition, as it appears in many ritual ceremonies, especially weddings and “le day thang”- a celebration of the baby’s first month old. If you plan to make Xoi Vo, soak the rice the night before to avoid long waiting time. PREPARATION TIME: 20 Minutes COOK TIME: 60 Minutes PREPARE INGREDIENTS - 2 cup of sweet rice - 2 cup mung beans (peeled or dehull and split) - 2 tbsp sugar - 1 tsp salt - 2/3 cup coconut milk - 2 tsp oil DETAIL RECIPE 1 - Wash the sticky rice and soak for 8-12 hours with water. If you wish to shorten the soaking time, use warm water. Wash mung beans and soak overnight separately. 2 - After soaking, wash both rice and bean carefully and set apart. Add 1/2 tsp salt to the bean and steam until well cooked, soft and fluffy (you can also use an electric cooker to cook the bean). Divide into two portions. 3 - Mix one bean portion with the washed rice and add 2 tsp oil, 1/2 tsp salt. Steam this mixture under medium heat until cooked. Add in 2/3 cup of coconut milk. Set the cooked rice on a plate to cool. 4 - Grind the other bean portion coarsely with 2 tbsp of sugar. Add to the cooked rice and steam for another 5 minutes. Set the finished rice on a plate and serve warm or cold.
Vietnamese Bread Rolls
This is a popular recipe for the famous Vietnamese bread rolls - can be stored for up to 3 days. PREPARATION TIME: 120 Minutes COOK TIME: 20 Minutes PREPARE INGREDIENTS 2 cups all purpose or bread flour 3/4 cup luke warm water 1 tbsp sugar 4 tsp melted butter 1 tsp salt 1 tsp yeast 3 tsp soft butter Extra flour for coating DETAIL RECIPE 1 - Dissolve sugar to 1/2 cup of luke warm water - add yeast and dissolve. 2 - In a large bowl, mix together flour, melted butter and salt. Add the liquid mixture above and beat slowly with an electric mixer. Add the rest of the luke warm water gradually if the mixture is still dry. Beat and mix well until the dough becomes consistent and has a smooth surface. 3 - Spray a bowl with cooking oil and place the dough there - cover and let sit for 1 hour until the dough doubles its size. 4 - Beat the dough slightly and knead well. Divide the dough into 6 to 10 portions, size of your choices. 5 - Slightly deflate the dough to even out the flour and roll back into the desirable shape. 6 - Place the rolls on a tray- lined with wax paper. Let sit in the oven for 30 minutes (you can turn on the oven for 1 minute at 100 Celcius degree and spray water to give the bread some moisture) 7 - Use a sharp razor to make a vertical slash. Smooth a tiny bit of water on the surface of the bread and dust with flour. Use the left over butter to fill in the slash. 8 - Preheat the oven to 375F or 190C degree. Bake for about 20 minutes until the bread turn light yellow and toothpicks come out clean.
