Braised Fish with Coconut Milk
The culinary artistry is subtly expressed through the combination of coconut milk and fish, in this dish, the smell of fish is not only reduced but also become more delicious. PREPARATION TIME: 15 Minutes COOK TIME: 35 Minutes PREPARE INGREDIENTS • 1lb fish fillet, trout or haddock • 1 tablespoon vegetable oil • 1/2 teaspoon pepper. • 1 red chili. • 2 tablespoons fish sauce • 4 ounces coconut milk DETAIL RECIPE 1- Heat oil, gently fry the fish. 2- Add fish sauce, pepper, chili and coconut milk. 3- Simmer for 30 minutes over low heat until the fish is cooked and coconut milk mostly evaporates 4- Remove the fish fillets and place on a serving dish. Sprinkle with pepper. This dish is best served with hot rice. If you have a clay pot, that would be ideal to make this dish.
Steamed Egg with Seafood
This egg dish is best served hot and enjoyed by many children. PREPARATION TIME: 15 Minutes COOK TIME: 10 Minutes PREPARE INGREDIENTS 2 eggs 5 fresh shrimps or thawed frozen ones 1/2 cup of scallops 1 tbsp of green onion, finely chopped 1 tbsp of coriander Salt, pepper and soy sauce to taste DETAIL RECIPE 1. Beat eggs in a bowl. Add salt, pepper and ½ cup of water, beat well. 2. Clean shrimps. Peel and devein shrimps, chop into small pieces. Blanch scallops in hot water. 3. Pour shrimps and scallops into a dish. Pour beaten eggs over shrimps and scallops. 4. Wrap the dish with food paper. Steam and boil for 8 – 10 minutes. 5. Sprinkle chopped green onion and coriander on top. Turn off the heat. 6. Sprinkle soy sauce over steamed egg. Serve hot.
