Chicken simmered with coconut milk
Coconut milk adds the sweet and rich taste to the chicken dish. This is best served with steamed rice on a cold winter day. PREPARATION TIME: 20 Minutes COOK TIME: 40 Minutes PREPARE INGREDIENTS •    1 Pound chicken drumsticks •    ½ Cup fresh milk •    ½ Cup coconut milk •    1 Tsp of salt •    1 Tsp of spice •    1 Tsp of sugar •    1 Tsp of grinded garlic •    1 Tsp  of grinded citronella •    1 Tbsp of grinded red chilly •    2Tsp of curry powder •    Cooking oil DETAIL RECIPE •    Wash the drumsticks, then mix with spice, salt, and sugar for 10 minutes •    Boil cooking oil, fry garlic, chilly and citronella then add curry powder, stir well •    Put chicken into the above mixture for 30 minutes •    Cooked the mixed chicken with small fire for 5 minutes, then add coconut milk, salt, sugar, heat until it is viscous appropriately Serving suggestion: serve with cooked rice or vermicelli
Chicken stir fried with pineapple
Pineapple is a popular garnish fruit to Vietnamese stir fry dish. PREPARATION TIME: 30 Minutes COOK TIME: 20 Minutes PREPARE INGREDIENTS •    1 Pound boneless chicken •    1 Big pineapple •    1 Red chilly •    Tomato sauce •    Chilly sauce •    1 Tsp of pepper •    2 Tsp of spice •    1 Tsp of sugar •    2 Tbsp wheat flour DETAIL RECIPE •    Peel and core pineapple, slice into small pieces •    Take out red bell pepper seeds, cut into square pieces •    Chop chicken into square pieces, mix with spice, pepper, sugar for 20 minutes •    Roll mixed chicken over wheat flour •    Boil cooking oil, fry the above chicken pieces until they turn yellow •    Add chilly sauce and tomato sauce to the pan, then add pineapple and red chilly, stir well •    Heat for 5 minutes more so that the chicken is drawn with sauce and pineapple flavor Serving suggestion: serve hot with cooked rice

Chicken stir fry with vermicelli
Stir fy dish is very popular in Vietnam, especially one that combines vermicelli with a type of meat and colourful vegetables. Chicken steamed with lemon
Lemon and lime can be used interchangeably in this simple recipe. You can cut down on the wait time for marinating chicken by preparing it in advance. PREPARATION TIME: 25 Minutes COOK TIME: 50 Minutes PREPARE INGREDIENTS •    1 Pullet •    2 Dried lime peels •    1 Tsp of sugar •    1 Tsp of spice •    ½ Tsp of clove’s bud •    2 Tsp of grinded ginger •    1 Tsp of salt •    1Tbsp wine •    Cooking oil DETAIL RECIPE •    Wash the pullet with salt and water, let it dry •    Mix it with sugar, spice, ginger for 3 hours •    Add 3 liters of water, lime peels, clove’s bud, salt, sugar into one pot, heat for 20 minutes •    Pour in the pullet, boil well for 20 – 25 minutes, and take out, let it dry •    Boil cooking oil, fry the pullet until its skin turns yellow •    Chop into pieces, arrange to dish Serving suggestion: serve with cooked rice or vermicelli and fish sauce

PREPARATION TIME: 20 Minutes COOK TIME: 40 Minutes PREPARE INGREDIENTS •    2 russet potato •    2 Pound chicken •    1 Tbsp mushroom •    2 Tbsp of grinded ginger •    Green onion, spice, sugar, cooking oil DETAIL RECIPE •    Wash chicken, chop into pieces •    Mix chicken with oil and 1 teaspoon of spice •    Soak mushroom in warm water, then slice •    Boil cooking oil, fry onion and ginger then braise with mixed chicken pieces •    Add a tbsp of sugar into the pan, braise until they turn to yellow •    Add 1 bowl of water into the pan, then pour in potato and mushroom, heat for about 30 minutes until well-cooked Serving suggestion: serve hot with vermicelli or cooked rice
Palace chicken
This is a rather complicated recipe but the outcome is all worth it. PREPARATION TIME: 30 Minutes COOK TIME: 50 Minutes PREPARE INGREDIENTS •    1 Pullet - 3 pounds •    1 Pound crab meat •    ½ Pound ground meat •    3 Tbsp shredded mushroom •    2 Tbsp shredded cabbage •    2 Tbsp  sliced carrot •    1 Tsp of fish sauce •    1 Tsp of spice •    ½ Tsp of pepper •    Cooking oil DETAIL RECIPE •    Wash clean the pullet, take out its bones •    Wash crab, steam well, separate its meat, stir fry the meat •    Add fish sauce, spice, pepper to the pullet, then put ground meat, crab meat, mushroom and carrot into the inner, roll over the pullet •    Steam for 30 minutes, take out to be cool, then fry until it is yellow Serving suggestion: serve hot with vermicelli and fish sauce or cooked rice
Grilled chicken with tamarind sauce
What can be tastier than the crisp from the grilled chicken and the soft and saucy from the tamarind paste. Go get your apron! PREPARATION TIME: 50 Minutes COOK TIME: 40 Minutes PREPARE INGREDIENTS •    1 Chicken •    1 Cup  tamarind •    1 Tbsp shredded eryngium leaves •    1 Tbsp onion •    1 Tsp of grinded garlic •    2 Tsp of chilly sauce •    2 Tbsp of fish sauce •    2 Tbsp of sugar or honey •    1 Tsp of pepper •    3 Tbsp of sugar •    Some wine, cooking oil, coconut liquor DETAIL RECIPE •    Wash clean the chicken, chop into pieces, then mix the chicken with ginger, onion, garlic, pepper for 30 minutes •    Wash tamarind then boil, filter to get the water •    Steam the mixed chicken for 15 minutes •    Make tamarind sauce: boil cooking oil, fry ginger, onion, garlic, green onion and some wine. When the wine is dry, pour in tamarind water, chilly sauce, fish sauce, pepper, sugar, coconut liquor, hot chilly, and shredded erygium leaves. Chicken grilled with lime leaves
Lime leaves, or kaffir leaves, are popular in most chicken dishes in Vietnam, including the boiled and grilled ones. PREPARATION TIME: 40 Minutes COOK TIME: 30 Minutes PREPARE INGREDIENTS •    1 chicken •    1 Tbsp shredded lemon leaves •    1 Tsp of salt •    1 Tsp of spice •    ½ Tsp of five spice seasoning •    1 Tsp of grinded garlic •    1 Tbsp of honey •    1 Tsp of lemon mash liquor •    1 Lemon •    2 Red pepper •    2 Tbsp shredded knotgrass DETAIL RECIPE •    Wash clean the chicken, then mix with salt, spice, five spice seasoning and shredded lemon leaves for 30 minutes •    Apply honey and lemon mash liquor onto the chicken’s skin •    Grill at 200 Celsius degree until the skin turns into yellow •    Chop the chicken into pieces, pour into the dish and dust with shredded lemon leaves Serving suggestion: serve this dish with spice, pepper and lemon sauce
