Vietnamese Pho with Beef Stew
A mixture of pho and beef cooked with brine builds a newly dish “Phở in beef stew soup” (Phở sốt vang). It attract people by softly and wine-smelly taste. This recipe yields 4 servings. PREPARATION TIME: 10 Minutes COOK TIME: 45 Minutes PREPARE INGREDIENTS 1 pound beef-leg bone or 1 large container of beef stock ¾ pound stewing beef  1 pack of dried pho - rice noodle 1 cup red wine 2 tbsp ginger and scallion 1 pack of cooking pho spice (bought at Asian grocery store) 1 bunch Green Onion 1 cup tomato sauce Thai basil, red chilli paste to serve. DETAIL RECIPE 1 - Cut the stewing beef chunk into small squares. Roughly roast the beef-leg bone then boil for stock or use the stock ready to cook 2 - Toast ginger, scallion and pho spice until fragrant. Smash and add them into the stock. 3 - Combine beef with garlic, pepper, salt, sugar, tomato sauce and marinate for about 10 minutes. Boil the beef bone in 45 minutes and re-filter bouillon. 4 - Heat oil over medium heat, saute garlic until it begins to turn light yellow and fragrant. Add beef then fry until it looks dry. 5 - Add the mixture to stock. Cook until the beef softens. Try in your taste and add red wine. 6 - Cooked the dried rice noodle in boiling water until well-done, divide into 4 bowls and cover with beef stew soup. Add Thai basil and pepper to taste. Serve with chili paste. Note: You may add carrot and daikon if you want more vegies in your dish.
Stir-fried Beef with Bamboo Shoots
When you have enough of fried, stewed, stir-fried dishes, you can change your family meal by Stir-fried beef with bamboo sprout. PREPARATION TIME: 30 Minutes COOK TIME: 20 Minutes PREPARE INGREDIENTS 0.5 pound beef 1 pound fresh bamboo shoot 1 bunch of green onion, finely chopped Dry garlic and ginger Coriander Seasoning powder Cooking oil DETAIL RECIPE 1 - Peel garlic, ginger, wash then mince 2 - Rinse beef with cold water and cut into thin slices. Mix with seasoning powder, minced garlic and ginger. 3 - Wash fresh bamboo shoots and tear or chop into threads. 4 - Wash coriander and let it drain off 5 - Pour some cooking oil in a pan and heat over medium fire. Stir-fry beef over high heat nimbly. Ladle stir-fried beef out into a plate and stir-fry the prepared bamboo shoots. Put stir-fried beef in and stir thoroughly. 6 - Add spring onion and turn off the stove. Take stir-fried beef with bamboo shoots out into a plate and spread coriander on the surface to decorate. Add salt and pepper to taste. * This dish is best served luke warm over steamed rice.
Stir-fried Beef with Pineapple
Pineapple is a popular juice of Vietnam summer. It is often eaten raw but sometimes it can be used as an ingredient in dishes such as Stir-fried beef with pineapple. The aroma of pineapple, the sweet of beef and the attractive color will make your family’s lunch much more appetizing. PREPARATION TIME: 20 Minutes COOK TIME: 20 Minutes PREPARE INGREDIENTS 1 pound green pineapple 1/2 cup tapioca starch 0.7 pound beef 1 tbsp sugar 2 tbsp cooking oil 1 bunch coriander 1 scallion Fish sauce, salt, ground black pepper, garlic, dry onion DETAIL RECIPE   1 - Rinse beef with cold water, let it drain off. Cut into thin slices 2 - Peel garlic, scallion and mince them together 3 - Mix beef with fish sauce, minced dry onion, sugar and tapioca starch 4 - Peel pineapple, remove its eyes, cut in quarters, remove its core and then cut into 0.5 centimeter slices 5 - Dissolve tapioca starch and sugar with water in a bowl 6 - Pour cooking oil into a pan; stir minced garlic and dry onion until aroma emerges. Put beef in, stir-fry over high heat, when it is almost cooked, ladle out into a plate. 7 - Pour some more cooking oil in, stir-fry pineapple. Pour the mixture of sugar and tapioca starch in, stir regularly, season with salt. Add beef and stir-fry together. 8 - Ladle out into a plate, spread ground black pepper, coriander on the surface.
